1 can crushed tomatoes
1 can diced tomatoes
1 small tin tomato paste
1 onion, chopped up
beef broth
Refrigerated cheese ravioli, tortellini, or agnolotti
2 garlic cloves, minced
1/2 tsp each dried oregano, basil, salt, sugar, salt, pepper
1/4 cup grated Parmesan Cheese
In large saucepan, place a bit of olive oil in the bottom, heat and add garlic and onions, cooke until onions are soft. Add tomatoes and paste, and heat through. In the meantime, cook the pasta according to package directions. Use a hand blender to blend the tomatoes, and onions. Add the spices, add pasta. Use the beef broth to thin the soup to your liking. You can cook up some ground beef and add that as well. Add some parmesan cheese to top of soup in each serving bowl.
Makes about 10 servings, enjoy!!
