Okay - here is the recipe I had you all drooling over tonight!! It was yummy.
FIESTA CHICKEN...
4 boneless, skinless chicken breasts
Taco Seasoning Mix
2 cups (or more) of red potatoes peeled, thinly sliced
Salsa
Grated Cheese (I used Cheddar - but any would almost be yummy)
Light Sour Cream
Oven 400. Sprinkle chicken with seasoning. Spray 4 pieces of foil with cooking spray before using. Place some potatoes on center of each of 4 sheets of heavy-duty foil, top with chicken, salsa and cheese.
Bring up foil sides, double fold over top and both ends to seal each packet, leaving room for heat circulation inside. Place on cookie sheet.
Bake 30 - 35 minutes, or until chicken is cooked through, and potatoes are fork tender. Remove packets, let stand 5 minutes. Cut slits in the foil to release steam before opening. Serve with sour cream.
Serves 4 - can be easily adjusted to serve more or less.
Thinly slices onions, peppers would also be a yummy addition.
